

Creamy Orzo & Pancetta Recipe
Ingredients
- 1/2 LB Orzo
- 8 oz Mascarpone Cheese
- 4 oz Pancetta ( small diced )
- 1 LG Shallot ( minced )
- 3 LG Garlic ( minced )
- 1 1/2 tablespoons fresh Sage ( finely chopped )
- 3 tablespoons unsalted Butter
- 1 1/2 cups fresh Spinach ( roughly chopped )
- 1 1/2 tablespoons fresh Parsley ( chopped )
- Sea Salt
- Black Pepper
Instructions
- * Boil Orzo Pasta – ( do not throw out Pasta water ) In a skillet over medium / low heat, melt 1 Tbsp Butter and add Pancetta.Cook Pancetta until brown and crispy, remove and set aside.In same Skillet, add 2 more tbsp Butter, Shallots and Sage, stir and let soften.Add Garlic, a pinch of Salt & let cook until fragrant.Add Spinach, stir & let cook down.Lower heat to lowest setting.Using a hand-held strainer, remove Pasta from boiling water and add straight into to the skillet.Stir in Mascarpone Cheese & Pasta Water. Toss with Pancetta & Fresh Parsley…serve! Enjoy!!!Buon Appetito e Mangia Bene!
