Creamy Orzo & Pancetta Recipe

Ingredients
  

  • 1/2 LB Orzo
  • 8 oz Mascarpone Cheese
  • 4 oz Pancetta ( small diced )
  • 1 LG Shallot ( minced )
  • 3 LG Garlic ( minced )
  • 1 1/2 tablespoons fresh Sage ( finely chopped ) 
  • 3 tablespoons unsalted Butter
  • 1 1/2 cups fresh Spinach ( roughly chopped )
  • 1 1/2 tablespoons fresh Parsley ( chopped )
  • Sea Salt
  • Black Pepper

Instructions
 

  • * Boil Orzo Pasta – ( do not throw out Pasta water ) 
     
    In a skillet over medium / low heat, melt 1 Tbsp Butter and add Pancetta.
    Cook Pancetta until brown and crispy, remove and set aside.
    In same Skillet,  add 2 more tbsp Butter, Shallots and Sage, stir and let soften.
    Add Garlic, a pinch of Salt & let cook until fragrant.
    Add Spinach, stir & let cook down.
    Lower heat to lowest setting.
    Using a hand-held strainer, remove Pasta from boiling water and add straight into to the skillet.
    Stir in Mascarpone Cheese & Pasta Water. 
    Toss with Pancetta & Fresh Parsley…serve!
