
WOW this mussel with saffron really packs a punch! The wine and saffron mix really kicks it up a notch. Add red chili flakes and spice it up!

Mussels with Saffron Recipe
Ingredients
- 2 pounds fresh mussels
- 1 teaspoon saffron threads
- 1 cup pino white wine
- 1 SM handful fresh parsley fine chopped
- 1 MED white onion
- 1 bay leaf dried
- 3 sprigs fresh thyme
- 2 tablespoons olive oil
- black pepper and sea salt to taste
- 1 cup water
Instructions
- In a saute pan add the mussles, onion,parsley,thyme,bay leaf,salt and pepper, wine,olive oil and saffron mix together and bring to a boil.Cook until all of the mussles open up. If you have a few that don't open throw them away.Once they all open transfer them to a serving bowl and reduce the liquid remaining to 2/3rds Pour the reduced liquid into the bowl with the mussles and serve it up!Garnish with more parsley and add red pepper flakes to spice it up if you choose
