WOW this mussel with saffron really packs a punch! The wine and saffron mix really kicks it up a notch. Add red chili flakes and spice it up!

  • 2 pounds fresh mussels
  • 1 teaspoon saffron threads
  • 1 cup pino white wine
  • 1 SM handful fresh parsley fine chopped
  • 1 MED white onion
  • 1 bay leaf dried
  • 3 sprigs fresh thyme
  • 2 tablespoons olive oil
  • black pepper and sea salt to taste
  • 1 cup water


  • In a saute pan add the mussles, onion,parsley,thyme,bay leaf,salt and pepper, wine,olive oil and saffron mix together and bring to a boil.
    Cook until all of the mussles open up. If you have a few that don't open throw them away.
    Once they all open transfer them to a serving bowl and reduce the liquid remaining to 2/3rds
    Pour the reduced liquid into the bowl with the mussles and serve it up!
    Garnish with more parsley and add red pepper flakes to spice it up if you choose
