Penne alla Vodka Recipe

Can you say… crowd pleaser?!?  O.M.G. This Penne alla Vodka recipe is just way too good!

 This is definitely not a low calorie dish, and the incredible flavor supports that! lol

 Rich, creamy, textured… this dish is a winner every single time!  There’s really not a whole lot more to say here… except… I hope your HUNGRY! =)  Cheers!

Penne alla Vodka Recipe

Ingredients
  

  • 1 pound Penne Pasta Noodles
  • 1 28oz can Crushed Tomatoes
  • 1/2 can Diced Tomatoes
  • 1/4 cup Heavy Cream
  • 1 1/2 tablespoon Sundried Tomatoes ( diced )
  • 1 stick Butter
  • 6 slices Bacon
  • 1 cup Vodka
  • 1 medium Yellow Onion  (rough chop)
  • 1 Pinch of Black Pepper
  • 1 teaspoon Sea Salt
  • 1 tablespoon Fresh Parsley

Instructions
 

For Vodka Sauce:

  • In a medium pot over low heat, fry bacon. Remove from pan, whencrispy
    Add onion to pan. Scrape bacon bits from pan & mix with onion.
    Add 1 stick butter. Cook until onions are soft.
    Add sundried tomatoes
    Add Vodka. Let simmer about 7 minutes or until alcohol cooks off.
    Add can of crushed tomatoes
    Add 1/2 can diced tomatoes
    Add heavy cream
    Add salt & pepper
    Let sauce simmer about 20 minutes, continuously stirring

For Pasta

  • *In a large pot, bring 4 quarts water to a rolling boil, salt& add pasta.
     
    *Let cook until al dente ( still a bit firm to the bite )
     
    *Once Pasta is cooked al dente ( or to desired consistency ),remove Pasta using a hand held strainer spoon/ ladle, and add to thesauce.*Stir and mix the Vodka sauce and Pasta together and let all the flavors“marry “ for a few minutes.
    *Remove from heat.
     
    *Garnish with crumbled crispy bacon bits and fresh parsley &Enjoy
