Ingredients

  • 1 3 1/4 lb Whole chicken
  • 3-4 tablespoons olive oil
  • 2 each red,yellow,green & orange peppers de-seed and cut into 2-3 in strips
  • 2 LG russet potatoes
  • 1 rib celery
  • 2 Medium carrots
  • 4 LG plumb tomatoes
  • 1 LG eggplant
  • 2 tablespoons capers
  • 1 cup Sicilian olives (I used stuffed with garlic)
  • 1 1/2 cup dry red wine I used cab wine
  • 1 tablespoons hot pepper chili flake (want it hotter? Add more after cooking)
  • 2 tablespoons Italian parsley
  • 2 tablespoons fresh mint

Instructions

  • Butcher the chicken, rinse and pat dry
Season both sides with salt and pepper
    Pre heat oven to 375
Add olive oil to a large frying pan or skillet and brown the chicken on both sides
When completed take out and put aside on a separate plate
Enter the potatoes, celery, eggplant, peppers, tomatoes, olives, chilies & capers.
Season with more salt and pepper while tossing them in pan
After 5 min of browning add red wine
Add chicken back to the pan, bring up to a boil
Once you have everything cooking good in the pan, place in the oven for 25 min with no top on it
Stir only 2-3 times while cooking. If you stir to much it will break up the ingredients to much and you will get mush
After 25 min take pan out of oven and stir in fresh mint, parsley and serve family style!
