Spicy Sicilian Chicken Recipe
Ingredients
- 1 3 1/4 lb Whole chicken
- 3-4 tablespoons olive oil
- 2 each red,yellow,green & orange peppers de-seed and cut into 2-3 in strips
- 2 LG russet potatoes
- 1 rib celery
- 2 Medium carrots
- 4 LG plumb tomatoes
- 1 LG eggplant
- 2 tablespoons capers
- 1 cup Sicilian olives (I used stuffed with garlic)
- 1 1/2 cup dry red wine I used cab wine
- 1 tablespoons hot pepper chili flake (want it hotter? Add more after cooking)
- 2 tablespoons Italian parsley
- 2 tablespoons fresh mint
Instructions
- Butcher the chicken, rinse and pat drySeason both sides with salt and pepperPre heat oven to 375Add olive oil to a large frying pan or skillet and brown the chicken on both sidesWhen completed take out and put aside on a separate plateEnter the potatoes, celery,eggplant, peppers, tomatoes, olives, chilies & capers.Season with more salt and pepper while tossing them in panAfter 5 min of browning add red wineAdd chicken back to the pan, bring up to a boilOnce you have everything cooking good in the pan, place in the oven for 25 min with no top on itStir only 2-3 times while cooking. If you stir to much it will break up the ingredients to much and you will get mushAfter 25 min take pan out of oven and stir in fresh mint, parsley and serve family style!By Frank LaMark – Primo Italians
