Chicken Piccata Recipe
Ingredients
- 4-5 Thinly Sliced Chicken Breast
- 2 cups Chicken Stock
- 1 stick Butter
- 4 SM Lemons
- 2 1/2 tablespoons Capers
- 2 tablspoons Flour ( for gravy )
- 1 Pinch of Black Pepper
- 1 teaspoon sea salt
- 1 teaspoon Fresh Parsley
Instructions
For Chicken:
- *Wash Chicken thoroughly & pat dry.Lightly Salt and Pepper chicken Dredge each piece of Chicken in Flour
For Piccata Gravy:
- In a large pan… Melt 3 Tbsp Butter over medium heatAdd Chicken to pan.Fry until a rich golden brown crust has formed on both sides ( and chicken is cooked through )Once chicken is browned and cooked through, remove from pan and place on top pf paper towel, in a single layer, cover with foil. In the SAME pan you cooked the Chicken in… Add the rest of the Butter Once Butter has melted, whisk in 2 Tbsp Flour, continuously whisking. Flour and Butter will begin to bubble. Continue to whisk about 3 minutes.Add Chicken Stock to pan, stir. * Make sure to scrape up any browned bits from the Chicken so that they can mix in with the gravy, this adds flavor.Continuously stir the gravyAdd the juice of 2.5 Lemons * Make sure to catch the lemon seeds from falling in =)Add CapersAdd Salt & PepperAdd Lemon slices from 1.5 Lemons to the gravyRemove after about 5 minutes – set aside ( for garnishing )Continuously stir and cook gravy for about 20 minutes.Add Chicken back to pan & cover all sides with the gravyLet simmer an additional 5-7 minutes.
