

Ultimate Chicken Parmesan Recipe
Ingredients
Chicken
- 2 LG Fresh Chicken Breast – Sliced in half to 1/2" thickness. Giving you 4 pieces when done
Flour & Egg Base
- 3 LG Eggs
- 1/2 cup all purpose flour
- 1/2 cup whipping cream
Bread coating Mix
- 1 cup Plain Panko bread crumbs
- 1 tablespoon fresh parsley chopped
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoons sea salt
- 1 teaspoons black pepper
- 1/2 cup pecorino romano cheese – fine grate
Additional ingredients
- 1/4 cup pinot grigio white wine
- 1 1/2 cups traditional red sauce (see additional recipe on site)
- 1 ball fresh whole milk mozzarella cheese – ball
- 2 tablespoons butter
- 4 tablespoons olive oil
- 1 tablespoon pecorino romano cheese for garnish

Flour & Egg Base Instructions
- Mix the eggs,flour & whipping cream in a bowl and make a pancake like slurry. Slowly add flour until achieving desired mix
Bread coating Mix
- Add all ingredients into large bowl and mix
Cooking instructions
- Cut chicken breasts in half making 1/2" piecesFirst Take each chicken breasts and coat in four mix slurry then coat into breadcrumb mixPlace fully coated chicken onto a wire rack to rest for 2-5 minIn a large cast iron frying pan place butter and olive oil and bring to a smokePlace each chicken piece into the pan careful not to crowd the pan to much. You should be able to add 2-3 pieces per frying pan.Fry to 2-3 min on medium flame on one side until brown then flip over to other sideWhite pan is still hot add 1 cup of tomato sauce around the chicken and cook for 1-2 minThen add white wine to pan around the chicken. Bring to a simmer and cook off alcohol for 1-2 minFlip the chicken carefully to fully coat sauce and wine on the chickenAdd 1/2 cup more tomato sauce to the pan around the chickenAdd 1 1/2" slice of mozzarella cheese over each chicken breastSprinkle a tablespoon of pecorino romano cheese over the chickenPlace the entire cast iron pan in the oven broiler to melt the cheese and slightly brown it for 1-2 minutes.Remove from broiler, plate your dish and enjoy!
